Cows eat grass, cereal grains, hay etc. As far as I know, cows are vegetarians.
Therefore, I am a vegetarian.
But sometimes cows can go bad and then you have to worry about Killer Vampire Cows.
I could easily eat vegetables every day of my life, rice, bean dishes etc. Specially if its in the form of Chinese food. But sometimes in the summer, that big juicy rib or T bone is just calling my name. We'll all be singing a different tune when our colons start falling out but until then.
I don't think its as much the red meat that hurts us as all the chemical supplements and growth hormones they feed our live stock.
Having been a vegetarian for more the 40 years I will have to pass. If you held a gun on me I would not eat one of those.

And that right there is sick. Your wife has a job where she deals with sick people and you are going to use their pain to push your own personal soap box agenda? Guess what, heart disease is not only caused by diet, it is also hugely dependent on genetics and even vegetarians who jog 5 miles a day and live very healthy lives sometimes end up having strokes or heart attacks. Stokes are not always preventable.

There is nothing wrong with eating meat, the problem is when it is the center of the diet. Most cities now have community programs where for a small amount of money you can get an ultrasound of the carotid arteries and a heart scan along with other tests. These are tests your insurance company will not usually pay for so you self pay for them yourself.
