Hello and good morning! I can understand your feeling like a professional level match is playing above your pay grade. But watching players in your current skill level is not going to teach you necessarily how to run racks better or have better shot selection.
In my time playing pool, I have divided up my video watching into several different pros for several different areas.
For touch shots and safety play, I often watch the Filipino players. For shot selection and pattern play, I often watch Neils, whom I regard personally as the heir of Ralph Souquet's tactical precision. For jump shots, I will often turn to Nick Vandenberg, who seems to possess an amazing amount of insight and control related to the jump shot. For breaking, I'm watching the Prince of Pool Corey Deuel and Shane Van Boening, two of the best breakers our sport has ever witnessed.
You can also watch by game type. For pattern recognition and shot selection, watch straight pool and 8 ball. For position tips and english instruction, watch 9 and 10. For defense, watch one pocket. For fun and that shot you hopefully never have to use, watch Derby City Bank Pool.
Just always remember: in order for gold to reach its purest form, it my be hammered and refined with fire. You have to seek out greater challenges and better players if you want your game to improve rather than stagnate.
