What does "one off" mean?

I have wondered about this.

I do see most people saying, well typing, actually, "one off".

Is it supposed to be "one off" or "one of" as in one of a kind?

When I was growing up people used it to refer to custom cars. In my mind, it is different from "one of a kind", for me, "one off" only refers to things that are built.

Anyway guys, I'm selling this cue so I can pay Ernie for my new lifetime Gina player, so as enticing as those Eddie Wheat cues look, no trades on this one please.

Mini-monster. The Peacock Gina has flown the coop. I haven't been to Ernie's in a couple of weeks (been that busy) so I don't have an update on yours (or mine) but I'm hoping he's close because I need a new lifetime player.
