My mother's side of the family was Cajun; my grandmother spoke Cajun French as a primary language (SE Texas). Before I left for college I made certain that I learned how to cook all the standard dishes. Still have etouffee and gumbo regularly. Scratch roux, no problem!

I'm mainly of German and Austrian descent with a bit of French Canadian tossed in just for fun , with that said I enjoy my Canadian neighbors to the north but can't stand some of the French I've met and dealed with ha ha .
