I'd tell the store owner my concerns in a nice way. To me, initial set up on a GC or any table, must be done right the first time. Like the foundation to your home. The wait time for a good table mechanic, is time well spent. Where I live now, to get any major repair done to my home, I will interview 3-4 contractors, more if needed to find not only the person who can do it, but I want to meet this person before I make my decision. I could of set my GCI up by now, instead I'm waiting 3 more months for the ''right guy''. Like your car mechanic, you don't want a rookie. Once I do pick the right contractor, I normally find out it's gonna be months before I get the job done, but having it done correctly the first time is my biggest concern. I'd put to the owner this way. Ask em if he came into your auto repair shop and you fixed his problem, but a week or two later he broke down and came back in for the same repair, how he would handle that? Now if it happened again, I'd lay into them, with a velvet foghorn, if that doesn't get a rise, I'd contact the BBB. If I paid by credit card for the table I might try to work that angle. First set up I feel is thee most important concern for a new table install. Remember good mechanics are ALWAYS busy.
