What about customers who are jerks? Should the employee be able to charge them more?

Yes! I love a good story of customer jerks who are escorted out. And there is a restaurant that made the news for an added charge due to the customer's not controlling their kids. I don't recall the outcome (did they have to pay), but at least they are taking a stand. I have no tolerance for jerks to go out into public and treat others like jerks for no reason.
At pool the other night, I asked for a glass of ice water. The bartender served me and I put $3 on the bar. She told me "Water is free." My response was "Your service and smile may be free as well, but it's appreciated." That made her day, as well as the lady at the bar that looked at me and smiled.
